1 cup coconut oil
1 tablespoon lime juice
1 teaspoon vanilla extract

In a high speed professional blender, mix the coconut flesh, coconut oil and soaked cashew until they have a smoothy texture. Then add the lime, sweetener and vanilla. Mix until well incorporated. Freeze overnight for the best texture. You can top with any kind of your choice!
